Effects of pretreatments on drying of Turkey berry in fluidized bed dryer

The influence of pretreatment methods like physical, chemical, combined and hybrid treatments on the Turkey berry (Solanum torvum) fruits to enhance water diffusion during drying was assessed due removing a waxy layer peel. Pretreated untreated samples were dried at 70 ?C 4 m/s air flow in fluidized bed dryer. Fruits pretreated with abrasion blanching have lowest time good vitamin C content retention 36%. highest rate 0.396 kg water/kgdb min?1, maximum effective moisture diffusivity 6.002 x 10-10 m2/s, volumetric shrinkage ratio 0.68 obtained for that undergone physical along drying. change color ?E = 14.75 Chroma - 10.53 samples.
